happy, merry, healthy

I’m home in New York for the next ten days, celebrating Chrismukkah with my family and New Years’ with friends. We have tons planned; museums and Van Cortlandt Manor, the Nutcracker at Lincoln Center, a few days of skiing. And I have tons planned; I want to tear through two or three more countries (I’m re-writing my travel blog (http://melissaleighe.blogspot.com) into a cohesive collection of essays), fool around with writing music for the storm poem i wrote (a few posts down), and work on an art project I’ve been daydreaming about for a few weeks.

This union suit was on my wishlist this year – I don’t think I’m going to get it but I like to imagine myself running around the house in it, eating bacon every morning and never putting real clothes on.

Chrismukkah tonight!

Tonight we’re serving up latkes and christmas cookies, with homemade apple sauce. All pretty easy, a little messy, and totally delicious.

latkes for 4
4 baking potatoes
4 tbsp flour
2 eggs
1/2 onion
veggie oil
grate (or food press) potatoes, add in onion, eggs – put in food processor/blender (you want it lumpy though, not smooth). add flour, salt and pepper. put about 1/2 inch oil in pan, fry up. just like breakfast pancakes, when your spatula can flip without issue, it’s time to flip. lay on plates covered in paper towel because those babies are going to be oily.

apple sauce
6 medium apples (i do 4 red, 2 green, why not?)
3/4 cup water
1/4 cup sugar
1 lemon
cinnamon to taste
bring water, sugar and apples (cubed) to boil, then let simmer for 40 minutes, stirring occasionally. remove from heat, add fresh lemon juice and cinnamon to taste.

christmas cookies
nestle tollhouse recipe; sub chocolate chips for red and green m&ms

pomegranate seeds
green onions
